Spiced Chickpeas and Spinach

Spices you probably already have in your pantry take this simple, healthy dish to the next level. Plus, it all comes together in less than 15 minutes. Serve it as a side, or over a halved sweet potato or rice to make it a meal!

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • tablespoon olive oil
  • ½ (70g) small onion, small dice
  • 2 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes
  • 1 tablespoon tomato paste
  • ½ cup vegetable stock, divided
  • 1 cup (140g) canned chickpeas, drained and rinsed
  • 2 oz (60g) spinach
  • Salt, to taste
  • Black pepper, to taste
  • teaspoon lemon juice

Preparation

  1. Combine olive oil, onion, garlic, cumin, smoked paprika, chili flakes, tomato paste, and half of the stock in the Anyday dish. Cover with the lid (knob lifted). 
  2. Cook in the microwave for 3 minutes, or until spices are fragrant.
  3. Add chickpeas and the other half of the stock and stir. Cover and cook for an additional 2 minutes.
  4. Add spinach. It will be a tight fit, but will cook down significantly! Cover and cook for 1 minute, or until spinach is wilted. 
  5. Mix in salt, pepper, and lemon juice. Stir thoroughly. Serve while warm.

Serving suggestions & tips

  • Try adding a tablespoon of freshly chopped cilantro, basil, or mint!
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
