Tomatoes and chicken are cooked together to make a delicious, slightly sweet sauce, then the chicken is broiled to brown and crisp the skin.

Ingredients
- 1 cup (150g) cherry tomatoes, halved
- 1 tablespoon tomato paste
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- 1 teaspoon smoked paprika
- 2 (225g) chicken thighs, bone-in and skin-on
- Salt, to taste
- Black pepper, to taste
Preparation
- Combine tomatoes, tomato paste, olive oil, garlic, oregano, and smoked paprika in the Anyday dish and m thoroughly.
- Season the chicken thighs with salt and pepper. Lay the thighs skin-side down on top of the tomato mixture. Cover with the lid (knob lifted).
- Cook in the microwave at Power Level 6tooltip for 9-10 minutes.
- , or until tomatoes are soft and jammy and chicken is cooked most of the way through.
- Meanwhile, preheat your broiler.
- Transfer the chicken thighs to a sheet tray, skin side up. Broil for 2-3 minutes (internal note: NO WATTAGE calculation necessary), or until skin is browned and crisp. Keep an eye on it, since it will go fast!
- Spoon sauce over chicken to serve.
Serving suggestions & tips
- Garnish with fresh parsley, chervil, or dill.
- Add a can of cooked beans for extra heartiness.
- Add some japaleños for a spicier and brighter alternative.
