Food52 says it best: “A sweet-salty twist on a classic North Carolina lemon pie that's as lazy and beachy as summer should be.” And yes, it can be made in the microwave! This recipe was adapted from Food52’s Atlantic Beach Pie by Bill Smith.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • ¼ cup (60g) unsalted butter
  • 3 ounces saltine crackers (about 30 crackers), crushed 
  • tablespoons sugar
  • 7 ounces sweetened condensed milk (about ½ cup + 2 tablespoons)
  • 2 large egg yolks
  • ¼ cup (60ml) lemon or lime juice
  • Fresh whipped cream, for serving
  • Coarse sea salt, for garnish
  • Lemon or lime slices, for garnish

Preparation

  1. Place the butter in the Anyday dish and microwave until fully melted, about 30 seconds.
  2. Add the crumbs and sugar and mix well. Make the crust by pressing the crumb mixture evenly into the bottom of the dish.
  3. In a separate bowl, whisk the condensed milk, egg yolks, and lemon or lime juice until smooth. Pour the mixture into the dish over the crust.
  4. Cook uncovered in the microwave at Power Level 5tooltip for 7-8 minutes. The pie will look shiny and slightly jiggly. Don’t worry if it has a few cracks!
  5. Cool completely in the fridge for at least 3 hours, or overnight. Top with whipped cream, salt, and extra citrus for garnish.

  • Serve with fresh fruit like strawberries, peaches, or other berries.
  • Enjoy with ice cream for a summer treat.
  • Use your favorite cookies for the crust if saltines aren’t available.
