Ingredients
- 2 teaspoons of butter
- 2 tablespoons of onion, small dice
- ¼ cup (40g) medium bell pepper, small dice
- 1 clove of garlic, minced
- salt, to taste
- pepper, to taste
- 2 eggs (150g)
- 1 tablespoon of sour cream (or mayonnaise)
- 1 tablespoon jack cheese, shredded
- 2 teaspoons basil, chopped
Preparation
- Combine butter, onion, bell pepper, garlic, salt, and pepper in the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 4-5 minutes or until the bell pepper is tender.
- In a separate bowl, beat eggs and sour cream (or mayo) thoroughly. Add cheese and chopped basil and mix well.
- Add egg, cheese, and herb mixture into the Anyday dish with the vegetables and stir briefly to combine. Cover (knob lifted) and cook at Power Level 7tooltip for 4 minutes, or until eggs are just set. Garnish with suggestions and serve.
Serving suggestions & tips
- Garnish with arugula, fresh herbs, salsa, avocado, or crème fraîche.
- Substitute jalapeños for bell peppers for a spicier version.
